Honestly for me the big one that made the game worth continuing was a mod letting you scrap junk for materials. Letting me get basic metal from all those pots, pans, goblets and other stuff made looting worthwhile and helped me brush up on blacksmithing early enough to make me happy.
Okay, that and the little mod that places Excalibur in a lake near Whiterun. I got a huge kick out of that and it was a solid 'tide you over' weapon until I could get some combat skills going along with the smithing. Once I didn't need it anymore it made a great decoration. Just wish there had been a way to get the lulzy swordbeam function in the game.
For me a lot of modding of Skyrim was just to fix stuff like that first one. Killable children was a must under the logic of 'If they can die when a dragon attacks, now I care more.' I don't recall seeing a 'remove plot vital from all NPC's forever' mod but I bet one exists.
Okay and glowing ore veins, that was annoyingly hard to find. Everything else was ultimately cosmetic or just for fun. (Magic beam sabers you say? Don't mind if I do!)
