I quite enjoyed the Force Unleashed games. It's been a few years since I've played them, though.

Besides the KOTOR series, Jedi Knight and the original Battlefront 2, some of the good Star Wars games that I like are:

Star Wars: Republic Commando - A squad-based FPS where you play as a clone with three squad mates during the clone wars.

Star Wars Rogue Squadron II: Rogue Leader - Space sim where you can play as plenty of different ships. It's pretty arcade-y and the levels are linear, but the graphics were amazing for its time. The game came out as a release title for the Game Cube and had amazing visuals.

Star Wars Episode I: Racer - A racing game where you have the pod racers from Episode I. Say what you want about the movie, but this game was pretty fun. Reminds me of the F-Zero games and Wipeout.

I was a fan of The Force Unleashed I & II. Solid action games that probably do the best job at making the player feel like an absolute Jedi badass.

phantom menace and revenge of the sith games were also pretty good too i think.
or you could go full retro with super star wars.

KOtOR 1&2 for sure, best Star Wars games ever IMHO.

The Force Unleashed 1 is decent, I preferred the psp version. The 2nd isn't as good.

Star wars pod racer game is decent.

Star wars Tie Fighter is good as well.

Definitely the Knight's of the Old Republic games, they are pretty long, packed with lore and some pretty good character development and will probably break your heart.

The Force Unleashed is comparable to God of War as far as actual gameplay goes and as mentioned above, you feel like a complete badass while playing those games.

I always thought Star Wars Bounty Hunter was one of the coolest games I had ever played and I seriously wish they would reboot it into an open world (open galaxy?) rpg, it's worth checking out if you have a ps2 and can find the game at a decent price.

If you are up for some challenging platformers, the Star Wars SNES games are pretty underrated.

IIRC there was a trophy in Force Unleashed for killing 100 wookies as Darth Vader..... I may have made that up In my head but I think there was something like that lol.

If you are looking for a quick fix, I'd say Battlefront 2. (The original).

If you are looking for something to immerse yourself in, I would go with KOTOR. However, it performs poorly on Xbox 360 and One, so unless you have an original Xbox, go with PC or the mobile version.

KOTOR 2 is great, but it can be tough to get a copy, and it takes a bit to kick off. But when it does it's awesome.

Also, Shadows of the Empire is a classic. I heard good things about the remaster. I haven't tried thay version but it's on Steam for 6 bucks.

Mobile version of KOtOR kills battery, at least on iPhone. I'd go PC, a potato can run it plus there's mods/cheats if you're into that.

There was a way to hack the save files on ios as well but I'd bet that's been patched out now, it was 2 or 3 years ago I played it on iPhone.
