Mine are:

Red Asphalt(ps1) - was the first time i've ever played the game for it's sound, probably the thing that got me hooked on Industrial metal
Most favourite piece - Overkill by Rik Schaffer

Namco Sound team - they make crazily good tunes since tekken 3, using innovative methods and fascinating techniques.
Most favourite pieces - Red hot fist, Ka-En-No-Mai, Crimson Sunset, Violet Systems 2nd, Antares, Zirkus, Tekken 3:intro, Jin's theme.

Frank Klepacki/C&C - absolute legend \m/,
Most favourite pieces - Hell March 2 / Hell March 3, Grinder.

Jesper Kyd - His art always leaves an emotional mark after listening, always compliments the game's atmosphere.
Most favourite pieces: Into Eternity, Glacial, Ash, Caverns, Pandora Park.

There are a heck of a lot of good ones. But if I had to pick a favorite OST it would be between two games. Sonic Unleashed. And Sonic and the Black Knight. Black Knight in particular has a very underrated OST.

The soundtrack for the first two Golden Sun games. It's amazing what the composer(s) for those games were able to do with SNES-equivalent sound files. I felt that music in my soul when I played those games. To this day, I can still remember what the music sounded like in almost every area. It was that memorable. Here are a few examples:

Christopher Larkin from Hollow Knight. Each piece is master work, it makes you feel things. My favorite is "Nightmare King Grimm", perfectly epic music for an epic fight.

I came here to say O’Donnell!
The main Halo themes still gives me chills. Also another underrated soundtrack is the subdued themes in ODST. One of my favourite games in the series and the soundtrack complimented the loneliness of the city perfectly.

I love the Far Horizon track in skyrim that and the Morrowind theme song, I find that to be the my favorite theme out of all the others.
