No worries, got a bit worked up for nothing in all honesty.
Thing is, sure, we all have opinions and when it comes to games, they're pretty much all valid when it comes to 'fun' or lack thereof. For example, my friend is a super competitive SSBU player and was, briefly, top 10 in the country until work got in the way(!), but I personally don't find fighting games fun, pretty much at all (and vice versa when it comes to any TW title). But when it comes to games that you yourself 'have' to play? Well, we can only really say what you 'might' like, not what you 'will' like, so you're the only one who can declare 'this is the game that was made for me/I was yearning for', but pretty much only when you play it. Takes a while to get there, true, but finding that handful of games you genuinely love... good feeling to have.

I'd recommend you Nier Automata without a doubt. It is marvellous. With several gameplays to see the actual ending and several game modes within the story that make it awesome.
also, the Mass Effect Trilogy. Dragon Age Origins, The Witcher trilogy.
Also, if you've got enough patience, try Kingdom Come Deliverance. It may not be look so good graphically, but the story is compelling, the world is alive (like yeah, people have jobs and they sleep during the night!) and it's kinda difficult to "get good" with the mechanics, specially with the fighting mechanics. Anyway, it's a good game worth the try.

Dwarf Fortress... Because the best stories are ones you make yourself.
Divinity Original Sin 1 (and I assume 2, but I've not played it yet) are very very good isometric RPGs in the style of Baldurs Gate.
Prey (both the original native american abduction story and the recent trapped on a space station survival simulator)
SOMA has a pretty cool body horror story, but the game itself is a boring walking sim.
I'd be wary of the Mass Effect series if you are looking for really good stories, as the series starts REALLY strong then after the first game begins a sharp downhill decline untill the infamous ending of 3, which was just plain insulting. The first game on it's own is a top notch space opera RPG, but expecting much from the series as a whole is setting yourself up for dissapointment. ME2 (and DA2) are where Bioware really started their decline in terms of writing talent and gameplay design.

Final Fantasy VI, Steins;Gate if you don't mind visual novels, trails of cold steel i and ii (until we finally get iii cmon falcom it's been a year)

Read synopses on stories/gameplay mechanics/structure and decide for yourself?
Not trying to be disingenuous or anything, but what works for some players won't work for you and vice versa. I couldn't stand Elder Scrolls: Morrowind for all the trumpeting it got (any of the half a dozen times I tried to play it). Fallout 3 is a good game, but it bores me to tears once I play it for more than five hours at a stretch. Same goes for Horizon: Zero Dawn, if to a lesser extent. And as already suggested Kingdom Come Deliverance is such an ambitious game and bugs notwithstanding, it succeeds admirably, but I hate the gameplay because as a player, I'm unsuited to it. On the other hand, Assassin's Creed II, Skyrim, Mass Effect series, Dragon Age (well, certain installments more than others), KotOR, the Witcher 2, Deus Ex: Human Revolution (first one as well, at that, however badly it's aged) are all I find great enjoyment in while others may not. But I'm not going to say you HAVE to play them 'cos I'm aware of the possibility you may not like them (or worse yet, hate them or think they're bad games, which is entirely your prerogative). Doesn't stop me from liking them... or stop them from being good games per general consensus.

Hyperbole regarding the phrasing of your question aside: AC2/4; ME series (especially 2 for story or 1 for world building if that's more your thing); DE:HR; KotOR (especially 1 for that raw BioWare nostalgia); would get my vote(s).
